Ingredients:
1 lb. sausage
1/2 onion, chopped
2 cloves garlic, minced
Cajun seasoning to taste
2 cups uncooked white rice
4 cups water

Prep time: 30 minutes
Yield: 6 servings
In a large skillet, brown sausage, onion, garlic, and Cajun seasoning over medium heat. When sausage is no longer pink, remove to a plate lined with paper towels. Wipe grease out of skillet. Return meat to skillet. Add rice and water. Bring to a boil. Cover, reduce to lowest possible heat, and cook 20 minutes without lifting the lid.
